1st course

 

Sullivan Harbor Farm Smoked Salmon, Spanish Flat Bread

                        Topped with brie cheese, grilled red onion, fried capers and pickled cauliflower.                   Garnished with a dill mustard cheddar stuffed deviled egg.

Rosti Potato Cake, Late Harvest Green Tomato Jam

Offered with green chili scented duck confit and friend brussels sprouts.

Lemon Blinis, Fried Oysters, Caramelized Apple Creme Fraiche

Garnished with butternut squash pearls.

Winters Vegetarian Terrine, Fennel Vinaigrette

                      Layered with roasted peppers, grilled eggplant, savory swiss chard and tomatillo,                  poblano chili cream cheese.  Garnished with avocado salsa.

Sweet Potato Biscuit, Crispy Fried Chicken Cake

Red eyed gravy.

 

2nd course

Grilled Applewood Smoked Ham, Cranberry Mustard Glaze

                                     Garnished with poached eggs, grilled asparagus and porcini                                             mushroom hollandaise sauce. 

Challah Bread Stuffed French Toast

                                              Layered with cream cheese and blueberry chutney.                                              Garnished with sweet sour cream and sundried fruit.

Farmers cheese, Potato Pierogies, Smoked Kielbasa Coddled Egg

Grandma Mary's braised cabbage with bacon, caraway seeds and tomato.

Southern Eggs Benedict, Artichoke Hollandaise Sauce

                                          Four onion biscuit, andouille sausage, poached eggs.                                            Garnished with cheddar cheese grits with shrimp.

Braised Beef Short Ribs, Bubble and Squeak

                                       Melt in your mouth, offered with potato pancakes,                                        garnished with our sausage gravy.

Ricotta and Spinach Cannelloni, San Marzano Tomato Sauce

                                             Topped with fontina and parmesan cheese.                                             Offered with our house fennel and pork sausage.

Additionally, a credit card number is required when making your reservation.  Cancellations made less than 4 days prior to your reservation date will incur a 50% cancellation fee.  No-shows will be charged the full amount.  Thank you for your understanding.**

Consider this...
 
Are you a meat-lover, looking for the ultimate dining experience?  Just need a great idea for date night?  What could be better than a share in a whole heritage Berkshire pig? Delicious, local, and sustainable! Chef Howard Shafer with  Chef Russell will procure a whole pig and guide you  through the process of turning it into tasty salty piggy parts.  
 
You will be invited into the kitchen for a butchering demonstration and then a hands-on class where you will make fresh sausage and start the curing process for bacon. Your custom package will then be processed and available for pickup when each cure is complete. 8 shares are required, so find some friends, or get your name on the list and we will do our best to create an "octet" for you!    

 
Price:   $200 per share to include 1/8 of a whole hog at approximately 200lbs hanging weight, yielding                           approximately 14 lbs of product per share*.  
              Add $70 per person for a private dinner in the Grayson Room after the                                                          demonstration, to include a four course dinner featuring meat from your own pork (wine, 20%                            service charge extra).   
 
*each pig is unique and yields vary. 
Below are estimated expected yields per 200 lb pig:
 
Boston roasts 8 lbs, sausage meat and fat 30 lbs, hams 36 lbs, smoked hocks 3 lbs, bacon 11lbs, baby back ribs 4.5 lbs, loin chops 12.5 lbs, tenderloins 2.5 lbs, country ribs 3 lbs, loin end roasts 7 lbs
