Cheese & Fruit Display
Russell’s will use three types of cheese, select fruit,
sliced bread, and seasonal attire.

BUTLERED APPETIZERS

Korean Barbecued Short Ribs of Beef
Boneless, slow braise, offered in an aromatic sesame seed sauce.

Oven Roasted Tomatoes
Wrapped with chorizo sausage, garnished with a roasted garlic sauce.

Baby Artichoke Torta
Marinated artichokes, baked in a rich custard, scented with parmigiano reggiano, oregano, and spice. Topped with lime scented romesco sauce.

Lobster Disks, Lemon Basil Aioli
Scented with lemon grass, scallions and Thai basil.

Franklin Connecticut Stuffed Mushrooms
Filled with a lemon scented veal and sage mixture.

Yellow Fin Tuna Cakes
Crisped, scented with grain, mustard and garlic chives.
Garnished with fennel aioli.


DINNER
1st SOUP & SALAD STATION

Two Fruit Soup Variations
a) Chilled, champagne scented cantaloupe and mango.
b) Chilled, passion fruit, pineapple and papaya.

Strawberry Walnut Salad
Tossed in a creamy black currant crème fraiche.

Classic Caesar Salad (Eggless)
Romaine lettuce, tossed with our dressing, cheesy croutons and romano cheese.

County Tossed Salad
Garden vegetables, healthy greens, offered with a fresh herb vinaigrette.

2nd GRILL STATION
Beef Tenderloin Medallions
Skewered with shiitake mushrooms, sweet onions and
red bell peppers, drizzled with balsamic syrup.

Char-grilled shrimp
Marinated with ginger, garlic, and rum, skewered with baby bok choy and papaya,
drizzled with fresh cherry vinaigrette.

Seasonal vegetables
Marinated in a sherry vinaigrette, garnished with fresh minced chives.

Toasted Israeli, Couscous, Wild Rice
Scented with garlic, onion & fresh thyme, garnished with oven roasted tomatoes.

Lemon Scented Feta Mashed Potatoes

3rd PASTA STATION
Honey Sesame Noodles
Tossed with wok-charred shiitake mushrooms, bok choy, Napa cabbage,
cashew nuts, and red bell peppers.

Pennette
(Tiny quill shaped pasta)Offered with tomato vodka sauce and grated cheese.

Rigatoni, Broccoli, Parmigiano Reggiano
Scented with lemon zest and virgin olive oil, tossed with toasted garlic chips,
oven roasted tomatoes and olives.

Roberto Bread
Crunchy garlic bread, topped with sautéed onions and mozzarella cheese.
