Russell’s will use three types of cheese, select fruit,
sliced bread, and seasonal attire.

Artfully arranged, offered with a seasonal dipping sauce.

Butternut Strudel
Layers of phyllo dough, Feta cheese, dill, butternut squash, shallots,
parsley, and scallions. (Very pretty)

Sushi, Makimono
Russell’s will offer a wonderful selection of seafood & vegetarian choices to include California rolls. Artfully garnished, offered with garlicky soy, pickled ginger and wasabi paste.


BUTLERED APPETIZERS

Baby New Zealand Lamb Chops
Topped with our sherried green peppercorn demi glace.

Fava Bean, Pecorino Romano Crostini
Garnished with oven roasted tomatoes.

Grilled Chicken Adriatico
Marinated with lemon, garlic, olive oil and Cuban oregano.
Skewered with cured olives and pickled peppers.

Miniature Hot Dogs in Puff Pastry
Offered with a brandied mustard dipping sauce.

Baby Artichoke Spoons, Lobster Salad
Tossed in lemon aioli, garnished with minced chives.

Char-Grilled Shrimp
Marinated with ginger, garlic, and rum, offered with a papaya mango chutney.


1st COURSE

Drizzled with a lemon dill vinaigrette, garnished with fresh asparagus,
red & yellow current tomatoes.

Four Onion Biscuits, Garlic Baquette, Flatbreads
Offered with herbal butter, garnishes.

 
2nd COURSE SELECTIONS
ENTREES

Char-Grilled Tenderloin of Beef
Scented with rosemary, milled black pepper, garlic, and olive oil,
offered with a shiitake mushroom shallot Madeira sauce. Garnished with garlic basil mashed Yukon gold potatoes, a French green bean bundle, fava beans, sweet carrots and a oven roasted tomato dome.

Seared Sea Bass, Gingered Shallots
Drizzled with a lemon champagne beurre blanc. Garnished with toasted Israeli couscous, a French green bean bundle, fava beans, sweet carrots and a oven roasted tomato dome
