Russell’s will use three types of cheese, select fruit,
sliced bread, and seasonal attire.

Grilled & Marinated Dipping Vegetables
Artfully arranged, offered with a crunchy vegetable roti chips, lemon garlic, dill hummis and classic baba chanouj.

BUTLERED APPETIZERS

Savory Vegetarian Pastries
Crispy, seasonal vegetables in pastry crust, garnished with lemon onion sambal.

Shrimp Mozambique
Skewered with potato and red bell pepper. Offered in a coconut sauce scented with garlic, lemon, cayenne pepper and parsley.

Roasted Buckwheat and Lamb Sausage Disks
Pan seared, topped with a horseradish garlic sauce.

Char Grilled “Wet Jerked” Chicken
Served on a sweet potato cake scented with lime, garnished with tropical salsa.

DINNER BUFFET

Breads
Puris, and flat breads. Offered with a fava bean puree scented with olive oil and basil.

Spinach Salad, Golden Lentils
Garnished with oven roasted tomatoes, pickled eggplant and olives.
Drizzled with a mustard lemon vinaigrette.

Chicken Tagine with Onions, Raisins and Toasted Whole Almonds
Offered with apple, tomato and raisin chutney.

Chana Jollof Gumbo (Tender)
Onion bell peppers, celery spices and garlic, (slow simmer) with smoked andouille sausage, shrimp, chicken and rice, garnished with green beans and oven roasted tomatoes.

Smoked Potato Salad, Lime Cumin Vinaigrette
Scented with fresh cilantro, tossed with a medley of roasted peppers and onions,
toasted pumpkin seeds, bacon and grilled corn.

Oven Roasted Seasonal Vegetables
Butternut squash, whole shallots, leeks and turnip. Scented with fresh thyme.

Offered with our lime raspberry sorbet.
