STATIONARY APPETIZERS

Cheese & Fruit Display
Russell’s will use six types of cheese, select fruit,
sliced bread, and seasonal attire.

Grilled & Marinated Dipping Vegetables
Artfully arranged, offered with a seasonal dipping sauce.

Butternut Strudel
Layers of phyllo dough, Feta cheese, dill, butternut squash, shallots,
parsley, and scallions. (Very pretty)

BUTLERED APPETIZERS

Char-Grilled Shrimp
Marinated with ginger, garlic, and rum, offered with a papaya mango chutney.

Southern Buster Crab
Offered on sweet toast, garnished with orange pecan Hollandaise sauce

Fava Bean, Pecorino Romano Crostini
Garnished with sun-dried tomato pesto.

Cayman Style Chicken
Crisped, marinated in Mirin wine and citrus juice, crusted with coconut bread
and macadamia nuts, garnished with our orange ginger aioli.


SALAD

Romaine and Friends
Crunchy romaine, Fava beans, current tomatoes
and purple fingerling potatoes. Drizzled with Moscatel vinaigrette

Four Onion Biscuits, Bacon Corn Muffins, Baquette
Chive Butter.

 
DINNER
DOUBLE BUFFET

Chicken Ballantine Nicoise
Whole boneless chicken, filled with a spinach, mushroom, artichoke, carrot and
Fontina cheese. Offered with a basil scented jus.

Three Grain Stuffed Portobello Mushroom
Offered on pappadella noodles, tomato poblano pepper sauce.
Garnished with baby peas.

Char Grilled New York Sirloin
Marinated with olive oil, milled black pepper, smoked sea salt, garlic and rosemary. Offered with a madira scented, hen of the woods mushroom demi glace.

Seasonal Asparagus, Heirloom Tomatoes
Drizzled with a refreshing vinaigrette.

Mashed Yukon Gold Potatoes
Flavored with heavy cream, nutmeg, white pepper, and horseradish.
Garnished with garlic-chives.

Cucumber Domes
Filled with refreshing corn salsa scented with basil and dill.
