- Pork confit, whole little neck clams (no shell,)
caramelized onion an apple.
- Oaxacan short ribs: Slow braise of chipotle,
oven roasted tomatoes, fire poblano peppers
in a tomatillo sauce, white hominy drizzle.
- Shrimp and crawfish, fava beans
in a cajun cream sauce with caramelized pearl
onions.
