Russell’s has traveled from seafood shack to clam shack to fritters shacks along the entire east coast. Hence the creation of our “Fritter Station”

Please choose three fritters with accompany sauces. This is an outdoor station. Fritters can also be used as butlered appetizers.

Smoked Duck Confit
With grilled corn, porcini mushrooms and caramelized onion. Served with a toasted almond, cherry mole.

Gooseneck Clam, Jalapeno, Manchego Cheese
Offered with a chunky lime, watercress, Jicama tarter sauce.

Aromatic Sea Scallops, Saffron Cashew Sauce
Scented with star of anise, ginger, green onion and chili.

Aged, smoked Basmati Rice, Chic Peas
With curried green peas, potato, and onion served with a cilantro chutney

Egcargot, Spinach and Mushroom Duxcelle
Scented with sautéed shallots and lemon thyme essence. Offered with a olive oil roasted tomato, garlic aioli.

Lemon Mascarpone, Chicken
With celery, salsify and minced green olive. Offered with a navel orange, tomato sauce.

Herbal Goat Cheese, Smoked Bacon Fritter’s
Offered with a curry scented tomato dipping sauce.

Corn and Clam Fritters
Crisped, offered with a basil scented tartar sauce.

Lobster Scallion Fritters
Scented with ginger, scallion, and orange zest, offered with a vanilla
lemon dipping sauce.

Seafood Fritters
A blend of clams, shrimp, and scallops, flavored with lemon zest and milled black pepper, offered with a dill scented dipping sauce.

Lobster and Asparagus
With tarragon scented braised leeks, offered with a lemon grass yogurt sauce.

Juniper Sausage, Fire Roasted Poblano Peppers
With oven roasted eggplant, garlic, chipoiti pepper, served with a cured black olive aioli.

Offered With a fresh mango salsa.
